Ingredients

• 8 chicken thighs, bone-in
• Salt and black pepper, skin-on
• 1 tbsp olive oil
• 4 streaky bacon rashers
• 1 onion, chopped
• 2 celery stalks, chopped
• 1 green pepper, chopped
• 3 garlic cloves, deseeded and chopped
• 1 tbsp fresh thyme leaves, crushed
• 1 tbsp cornflour
• 350 ml lager
• 1 x 400 g tinned chopped tomatoes
• 250 ml chicken stock
