Ingredients

• 1/4 cup unsalted butter, melted (1/2 stick)
• 2/3 cup firmly packed muscovado or dark brown sugar (see note)
• 3 eggs, separated, at room temperature
• 1/4 cup all-purpose flour
• 1/4 teaspoon (heaping) salt
• 1 1/4 cups plus 3 tablespoons whole milk, at room temperature
• 2 tablespoons dark rum
• 1 teaspoon vanilla
• 1/4 cup granulated sugar
• Whipped cream (optional garnish)
