• 3/4 teaspoon active dry yeast
• Biga (recipe follows), at room temperature
• About 5 cups bread flour
• 3/4 cup whole-wheat flour
• 3 1/2 teaspoons salt
• 1 1/2 cups (about 6 oz.) chopped leeks (white and pale green parts only)
• 3/4 cup chopped walnuts (about 4 oz.)
• 2 tablespoons chopped fresh oregano leaves
• About 1/4 cup cornmeal
