Ingredients

• 2 tbsp (30 mL) Mastro® Olive Oil
• 4 oz (125 g) Mastro® Diced Pancetta
• 1 small onion, finely chopped
• 4 cloves garlic, minced
• 6 cups (1.5 l) cubed day-old Italian bread
• 1/2 cup (125 ml) chopped roasted red peppers
• 1/4 cup (60 ml) finely chopped fresh parsley
• 6 eggs, beaten
• 1 cup (250 ml) 5% light cream
• 3 tbsp (45 ml) Dijon mustard
• 3/4 tsp (4 ml) each salt and pepper
