Ingredients

• 4 large boneless, skinless chicken breasts, cut into bite-sized pieces
• Humble and Frank HIGH TIDE MAUI SAUCE AND MARINADE
• 3 large shallots, thinly sliced
• 1 red bell pepper, thinly sliced
• 4 Tbsp olive oil, divided
• 1 tbsp toasted sesame oil
• 4 cups cold, day-old cooked rice
• 1 cup fresh, cubed pineapple pieces
• 1 cup frozen green peas
• 1 bunch scallions, thinly sliced
• 2 tbsp toasted sesame seeds
• 6 sunny fried eggs (optional)
• Tamari or soy sauce for serving
