Ranch Meatloaf – The Ranch Table

Ingredients

• 2 medium onions, finely chopped
• 4 cloves of garlic, peeled and finely chopped
• 2 tablespoons olive oil
• 1 cup chopped parsley
• 2-4 teaspoons Kosher salt
• 4 pounds ground beef
• 6 eggs, lightly beaten
• 1 cup bread crumbs (2-4 heels of sliced bread)
• 2 cups diced, canned tomatoes (drained)
• 2 teaspoons fresh thyme, finely chopped
