• 225g unsalted butter, at room temperature
• 175g golden caster sugar
• 2 medium eggs
• 1 tbsp vanilla extract
• 425g plain flour, plus 1 tbsp

• 30g flaked almonds
• icing sugar, for dusting
• 400g rhubarb, trimmed and diced into 1-2cm chunks
• 2 x 8g sachets arrowroot (or 15g)
• 100g caster sugar
