Ingredients

• 1 cup Arborio rice
• ½ cup dried Candy Cap Mushrooms , ground to a fine powder
• 4 cups vegetable or chicken broth, heated
• 1 small onion, finely chopped
• 2 cloves garlic, minced
• ½ cup dry white wine
• 3 tablespoons unsalted butter
• ¼ cup Parmesan cheese, grated
• 2 tablespoons olive oil
• Salt and freshly ground black pepper to taste
• Fresh parsley, chopped (for garnish)
