Ingredients

  • 1/3 cup (75 ml) pickled ginger
  • 2 tbsps (30 ml) soy sauce
  • 1 tbsp (15 ml) chopped fresh garlic (about 3 small cloves)
  • 1 tbsp (15 ml) honey
  • 1 tbsp (15 ml) mirin
  • 1 tbsp (15 ml) rice vinegar
  • 2 tsps (10 ml) frenchs honey dijon mustard
  • 1/2 tsp (2 ml) sugar
  • 1/2 cup (125 ml) vegetable oil
  • 3 cups (750 ml) hot cooked soba noodles (about 1/2 (7oz) package)
  • 1 1/3 cups (325 ml) thinly sliced yellow or orange bell pepper
  • 1/2 cup (125 ml) thinly sliced green onions
  • 4 king trumpet mushrooms (king oyster mushrooms) trimmed
  • 4 tbsps (60 ml) vegetable oil divided
  • 1/2 cup (125 ml) light soy sauce
  • 1/4 cup (60 ml) honey
  • 8 tsps (40 ml) white miso paste
  • 24 bok choy leaves blanched
