Ingredients

• large onions, 2 cut into thick rings
• cornmeal, 1 cup
• all-purpose flour, 1/2 cup
• baking powder, 1 tsp
• egg, 1 pc lightly beaten
• buttermilk, 1 1/4 cups
• butter, 2 tbsp melted + extra for frying
• honey, 4 tbsp
• sea salt, a pinch
• ground black pepper, to taste
• chives, 1 tablespoon finely chopped for garnish
