  • 2 tsp. ground cumin
  • 2 tbsp. fresh lime juice
  • Kosher salt and freshly ground black pepper, to taste
  • 1 <sup>1</sup>⁄<sub>4</sub> cups canola oil
  • 12 (8-inch) corn tortillas
  • 6 cups shredded sharp cheddar
  • <sup>1</sup>⁄<sub>4</sub> cup shredded Monterey Jack
