- 2 tsp. ground cumin
- 2 tbsp. fresh lime juice
- Kosher salt and freshly ground black pepper, to taste

- 12 (8-inch) corn tortillas
- 6 cups shredded sharp cheddar
- <sup>1</sup>⁄<sub>4</sub> cup shredded Monterey Jack
- Sliced scallions, cilantro sprigs, and sour cream, for garnish
