- 2 teaspoons rice wine or dry sherry
- 1½ tablespoons peanut oil
- 2 tablespoons finely chopped garlic
- 1 teaspoon sugar
- 850 ml/1½ pt chicken stock
- 450 g/1 lb fresh Chinese noodles
- 125 g/4 oz Sichuan preserved vegetables
- 1 teaspoon chilli powder
- 1 teaspoon sesame oil
- 2 teaspoons dark soy sauce
- 2 tablespoons finely chopped spring onions
