Ingredients

  • 10 oz. fatty ground lamb
  • <sup>1</sup>⁄<sub>3</sub> cup grated Pecorino Romano
  • <sup>1</sup>⁄<sub>4</sub> cup bread crumbs
  • 1 large egg
  • 2 tbsp. minced Italian parsley
  • 1 tsp. finely grated orange zest
  • <sup>1</sup>⁄<sub>4</sub> tsp. finely grated lemon zest
  • 1 small garlic clove, grated
  • <sup>3</sup>⁄<sub>4</sub> tsp. kosher salt
  • Freshly ground black pepper
  • <sup>1</sup>⁄<sub>4</sub> cup extra-virgin olive oil
  • 2 medium carrots, diced
  • 1 celery stalk, diced
  • 2 scallions, diced
  • 2 tbsp. finely grated fresh ginger
  • 1 tbsp. finely grated fresh turmeric
  • 1 tbsp. garam masala
  • 2 lb. fresh yellow tomatoes, puréed in a blender (4 cups)
  • 1 14-oz. can coconut milk
