Ingredients

• 4 1/2 cups bread or high-gluten flour
• 2 teaspoons Kosher salt
• 1 teaspoon instant yeast
• 1 3/4 cups cool water (14 fluid ounces)
• 2 cups pizza sauce
• 1 pound fresh mozzarella cheese, sliced thin
• 1/2 pound fresh morel mushrooms, or 1 cup dried, re-hydrated mushrooms
• 1 pound bulk fresh Italian sausage, cooked, then cooled
