'Chicken Kiev' Spatchcock Chicken with Caesar Salad

• 1 x corn fed chicken spatch cocked
• 200g butter soft
• 7 cloves garlic, peeled
• 1 bunch parsley chopped
• 2 slices thick cut bread
• 1 lemon juice only
• 50ml olive oil
• Salt
• pepper
• 2 cos lettuce, sliced
• 50g shaved parmesan
• 2 egg yolks
• 1 tbs Dijon mustard
• 200ml veg oil
• 1 clove garlic
• 2 anchovies
• 1 tbs white wine vinegar
