  • 2 yellow onions (thinly sliced)
  • 1 Granny Smith apple (peeled, core removed, and chopped)
  • 3 tablespoons light brown sugar
  • 2 garlic cloves (minced)
  • 1/4 teaspoon grated nutmeg
  • 1/2 teaspoon cumin seeds
  • 2 teaspoons kosher salt (plus more for seasoning)
  • 1/2 teaspoon black pepper (plus more for seasoning)
  • 3 tablespoons apple cider vinegar
  • 6 cups chicken stock Watercress (for garnish)
  • 2 tablespoons extra virgin olive oil
  • 12 ounces rib-eye steak (fat removed)
  • 6 ounces Valdeón (rind removed)
  • 2 cups panko breadcrumbs 2 eggs (beaten)
  • 1/4 cup all-purpose flour
