Fresh, finely sliced courgettes, capers, and mint tossed in olive oil and lemon; perfect for a summer salad.

- 3 very fresh, small courgettes
- 1 teaspoon capers, finely chopped
- half a shallot, finely chopped
- small handful of mint, finely chopped
- 3 tablespoons extra virgin olive oil
- 2 teaspoons lemon juice
- 2 teaspoons cider vinegar
- quarter teaspoon salt
