- 1/2 C. grated carrot
- 1/2 C. artichoke hearts (sliced)
- 1/4 C. sun-dried tomatoes (diced (or fresh halved grape tomatoes))
- 1 sm. can sliced black olives
- 3-5 Tbs. olive oil
- 1/4 C. balsamic vinegar
- 2 Tbs. fat-free Italian dressing (optional)
- salt and pepper to taste
