Ingredients

  • 2 pounds lamb stew meat, cut into chunks
  • Salt and pepper to taste
  • 1 tablespoon canola oil
  • 1 green bell pepper, chopped
  • 1 Poblano or Anaheim pepper, chopped (optional)
  • 1 red bell pepper, cored, chopped
  • 1/2 yellow onion, chopped
  • 1 jalapeño pepper, seeded and chopped
  • 2 cloves garlic, finely chopped
  • 1 tablespoon ancho chile powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1 cup low-sodium chicken broth
  • 1 tablespoon Worcestershire sauce
  • 1/2 tablespoon brown sugar
  • 1 can (14.5-ounce) crushed fire-roasted tomatoes
  • 1 can (7-ounce) chipotle sauce or 2 tablespoons adobo sauce from a can of chipotles in adobo
  • 1 bay leaf
  • 1 can (15-ounce) black beans, drained and rinsed
  • 1 can (15-ounce) red kidney beans, drained and rinsed
  • 1/3 bunch green onions, green parts only, thinly sliced
  • 3 tablespoons chopped fresh cilantro
