A fantastic pesto made from artichoke and Västerbotten cheese®. Goes just as well with pasta as with grilled!
Ingredients

- 1 clove of garlic
- 40 g of pine nuts
- 2 tablespoons olive oil
- 1 tsp lemon juice
- 1 tsp finely grated lemon zest
- 100 g Västerbottensost®, finely grated
