• 3 cloves Garlic, minced
• 2 bulbs Shallots, sliced
• 2 Tomatoes, vine-ripened, diced
• 1 Bell peppers, green, sliced
• 1 Bell peppers, red, sliced
• 1/2 lb Sausage, andouille (cooked), sliced
• 1 can Beans, cannellini or garbanzo (14 oz / 397 g can), drained and rinsed
• 6 oz Pasta, penne (or other shape)
• 1 Tbsp Cooking oil
• 1/4 cup Sour cream
• 4 oz Baby spinach
• 1 Tbsp Lemon juice
• to taste Hot sauce
