Ingredients

• 1 small onion, finely chopped
• olive oil
• 500g beef mince
• 2 tsp dried oregano
• 6 tbsp grated Parmesan
• 2 large egg yolks
• ½ tsp dried crushed chilli flakes (optional)
• rigatoni, or other pasta, cooked according to packet instructions
• a handful of basil leaves
• Parmesan shavings, to finish
• 3 garlic cloves, crushed
• 2 x 400g tins chopped tomatoes
• 1 tbsp balsamic vinegar
• 2 tsp caster sugar
