Ingredients

• 1¼ cup carrots, chopped
• ½ cup celery, chopped
• 9 cups chicken stock or broth
• 1 tsp rosemary
• 1 tsp thyme
• 1 tbs lemon pepper seasoning
• ¼ cup lemon juice
• 2 cups uncooked chicken, cut in bite size pieces
• ½ package of chopped frozen spinach, thawed
