Fig Sticky Toffee Pudding – Fustini's Oils & Vinegars

Ingredients

• 6oz dates, pitted and chopped (or, if dates are not available, 3/4 cup raisins)
• 1/2 cup Fustini's Fig balsamic
• 3/4 cup granulated sugar
• 1/4 cup (half a stick) unsalted butter, softened
• 1 egg
• 1 cup all-purpose flour
• 1 teaspoon baking powder
• 1/4 teaspoon baking soda
• 1/4 teaspoon salt
• 1 cup heavy cream (plus 1/2 cup)
• 4 oz (1 stick) unsalted butter, cut into small cubes
• 1/3 cup corn syrup
• 3/4 cup granulated sugar whipped cream for topping
