Ingredients

  • 2 ½ cups fine bulgur (#1)*
  • 1 cup chickpea flour
  • 1 cup semolina flour
  • 1 cup whole grain breadcrumbs
  • 2 tablespoons olive oil
  • 1 tablespoon tomato paste
  • 1 tablespoon salt
  • 2 pounds ground beef, highest fat content available - 80/20
  • 2 ounces ground lamb fat (optional)*
  • 3 teaspoons Jerusalem spice blend
  • 2 teaspoons ground coriander
  • 1 ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup neutral oil (like canola, sunflower or grapeseed)
  • 4 large onions, finely chopped
  • Canola or Sunflower Oil, for deep frying
