• 12 cups (3 L) russet potatoes, peeled and grated
• 3/4 cup (175 mL) all purpose flour
• 18 eggs, beaten
• 1 cup (250 mL) onion, grated
• 4 1/2 cups (1.125 L) unsweetened home-style apple sauce
• 1 tsp (5 mL) olive oil
• 1 tsp (5 mL) salt
• 1 tsp (5 mL) pepper
