Apple, Rum and Raisin Cake with Rum Syrup

Ingredients

• 20g butter, melted
• 2 tbsp plain flour
• 1 cup raisins
• ½ cup dark rum
• 160g butter, at room temperature
• 1 cup firmly packed brown sugar
• 2 eggs
• 2 tsp vanilla extract
• 2 cups self-raising flour
• ¾ cup plain flour
• 2 tsp ground cinnamon
• ½ tsp ground nutmeg
• 1 cup buttermilk
• 2 small apples (250g), peeled, core removed, diced
• ½ cup dark rum, extra
• 1¼ cups caster sugar
• 250g muscatels
• thick cream, to serve
