Ingredients

• 8-10 thyme branches
• Bay leaves
• 1 guajillo chilli deseeded (optional)
• Sea salt and black pepper
• 100ml white wine or dry sherry
• 4 large sausages
• 1 fennel bulbs
• 2 garlic cloves
• 1 tbsp extra-virgin olive oil
• 1 onion peeled and sliced
• 1 tin new potatoes
• 175ml chicken stock
• 175g podded fresh peas or a mix of peas and green beans
• 1 tin cannellini beans
