Romanian Cabbage Rolls (Sarmale)

Ingredients

• 1 cup brown rice
• 3/4 cups buckwheat
• 1 head cabbage, fermented
• 1 large onion, finely chopped
• 5 tbsp tomato paste
• 3 tbsp aquafaba
• 3 tbsp paprika
• 3 tsp thyme
• 5 leaves bay leaf
• 3 tsp olive oil
• 1 cube vegetable stock
• 1 tsp salt
• 1 tbsp peppercorn (whole, plus some red peppercorn for decoration)
• 1 tbsp oolong tea (steeped in around 1 litre of water)
