Thai Sweet Potato from Seasonal Soups by Fraser Reid

Ingredients

• 1 chilli, deseeded (optional) and finely chopped
• 1 tablespoon olive oil or butter
• 2 garlic cloves, peeled and finely chopped
• 1 onion, peeled and roughly chopped
• 2 stock cubes
• 1 large sweet potato, peeled and roughly chopped
• 2 cm fresh ginger, peeled and grated
• salt and freshly ground black pepper
• 1½ tablespoons creamed coconut
• 1 or 2 Makrut lime leaves
