Ingredients

• 2 1/2 cups unbleached all-purpose flour
• 1 teaspoon table salt
• 2 tablespoons sugar
• 12 tablespoons (1 1/2 sticks) cold unsalted butter cut into 1/4 inch slices
• 1/2 cup cold vegetable shortening
• 1/2 cup cold water
• 3 medium apples, (1 Braeburn, 1 Royal Gala, 1 Macintosh) peeled, cored and cut into 1/4 inch cubes
• 1 Bosc pear, peeled, cored and cut into 1/4 inch cubes
• 1/4 cups blackberries
• 1/2 cups blueberries, picked over for stems
• 1/2 cups strawberries, hulled and sliced
• 1/4 cup wineberry jam
• 1 cups sugar
• 1/4 teaspoon ground nutmeg
• 1/4 teaspoon ground cinnamon
• 1/2 Madagascar vanilla bean- seeds scrapped from pod
• 1/4 teaspoon salt
• 2 tablespoon fresh lime juice
• 2 tablespoons butter
• 3 tablespoons half and half
• 2 tablespoons vanilla sugar
