Ingredients

• 3½ to 4 lbs boneless lamb stew meat
• 2 tbsp olive oil
• ¾ tsp kosher salt
• ½ tsp freshly ground black pepper
• 1/8 cup all-purpose flour
• 3 white onions, sliced thickly
• 1 bay leaf
• 1 can or bottle of dark beer (such as Guinness)
• ¼ cup veal demi-glace
• 1 tbsp balsamic vinegar
• 8 oz baby carrots
• 1 lb fresh English peas, shelled
• 1 lb russet potatoes, peeled and cubed
• 2 tbsp minced parsley
