Ingredients

• 4 tbsp extra virgin olive oil
• 8 boneless boneless skinless chicken thighs
• 1 tsp salt
• 1/2 tsp pepper
• 1 (13- ounce) package hickory smoked turkey sausage, sliced 1/4 inch think
• 1 red bell pepper, chopped
• 1 small yellow onion, chopped
• 2 (15-ounce) cans diced tomatoes
• 1 tsp creole seasoning
• 4 cups cooked rice
• 1 cup chicken broth
