• Olive Oil Brioche Dough: 3 cups bread flour (365 grams)
• ¼ cup granulated sugar (50 grams)
• 2 teaspoons salt
• 1 ½ teaspoons active dry yeast
• 3 large eggs (150 grams)
• ½ cup water, cold (130 grams)
• 1 stick unsalted butter, cold and cubed (115 grams)
• 1 ½ cups granulated sugar
• Zest of two yuzu
