Ingredients

• 2 eggs, beaten
• 1 medium onion, chopped fine
• 2 Tbsp Olea balsamic vinegar with honey
• 2 medium ripe tomatoes, grated
• Olea oregano, Olea sea salt and black pepper to taste
• Olea Estates organic EVOO
• Kefalotyri (greek sheep cheese) or use any other hard yellow cheese or feta
