The national dish of Peru, ceviche is a refreshing mixture of raw fish, cold-cooked in lime juice, served with red onions and canchita.
Ingredients
- 1 pound sea bass filets, cut into 1/2-inch pieces
- ½ red onion, very thinly sliced
- 3 limes, juiced
- 1 tbsp seeded, chopped Rocoto hot pepper
- Sea salt, to taste
- Freshly cracked black pepper, to taste
- ½ cup fresh cilantro leaves
- Canchita (Peruvian toasted corn), finely chopped – you may know them as corn nuts
