Asian-Inspired Shepherd's Pie

Ingredients

• 1/2 cup diced carrots
• 1/2 cup diced celery
• 1/2 cup diced onion
• 1/2 cup diced green onion
• 4 cloves of garlic, minced
• 1 cup shiitake mushrooms, sliced in half
• 1 cup shelled edamame
• 1/2 cup dry white wine
• 1 pound leftover turkey meat, off the bone, pulled apart or chopped
• 4 cup gravy
• 1/8 cup soy sauce
• 1 tablespoon sesame oil
• 6 cup mashed potatoes or mashed japanese sweet potatoes
• 2 tablespoon olive oil
• crumbled nori or toasted sesame seeds, for garnish
• salt and pepper, to taste
