Should be around 100f, not so hot that it kills the yeast.; 2 and 3/4 teaspoons yeast; 4 cups (520g) flour, plus more for work surface; 1 Tablespoon granulated sugar or packed light or dark brown sugar; 2 teaspoons salt; coating the bowl: nonstick spray or 2 teaspoons olive oil; egg wash: 1 egg white beaten with 1 Tablespoon water; ~8l water; 1/4c honey; Everything Spice bagel mix; Poppy seeds; Sesame seeds; ... whatever works!
