Ingredients
- 2 tablespoons olive oil
- 2 large red bell peppers, cut into 1/4” dice
- 1 small onion, peeled and cut into 1/4” dice
- 3 cloves garlic, peeled and finely chopped
- 2 teaspoons tomato paste
- 2 teaspoons harissa, or more to taste
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 28-ounce can low sodium diced tomatoes, plus water as needed
- 2 bay leaves, fresh preferred
- 2 tablespoons fresh parsley, destemmed and finely chopped, plus more for garnish
- 2 tablespoons fresh cilantro, including stems, finely chopped, plus more for garnish
- 1/2 teaspoon kosher salt, more to taste
- 1/4 teaspoon freshly ground black pepper, more to taste
- 2 teaspoons fresh lemon juice or red wine vinegar
- 4 to 8 eggs (one or two per serving)
- 1/2 cup feta, crumbled
- 4 large slices toasted sourdough bread or warmed pita, for serving
