Ingredients

• 2⅕ pounds chicken (boneless from thighs and legs cut into small pieces)
• 9 ounces sausages (spicy cut into ¼inch pieces)
• 1 splash of oil (enough to fry chicken)
• 1 cup chopped scallions
• 1 cup finely chopped green bell peppers
• ¾ cup chopped finely celery
• 1 teaspoon minced garlic
• 1 teaspoon paprika
• 2 tablespoons cajun-creole seasoning
• 2 cups chicken broth
