Baked Potato Soup - Soups 2010 - FTC

Ingredients

• 1/2 cup butter (1 stick)
• 1/4 cup flour
• 4 cups milk
• 1 cup heavy cream
• 4 baking potatoes, baked, cooled, peeled and cubed
• 1 shallot, chopped
• 1 garlic clove, chopped
• 10 to 12 strips bacon, cooked, drained, and crumbled
• 1 cup shredded mozzarella cheese (I used cheddar)
• 1/2 cup (4 ounces) sour cream
• 1 teaspoon salt
• 1/2 teaspoon white pepper
• 1/4 cup chopped fresh parsley
