Ingredients

• 1 tablespoon olive oil
• 1/2 onion, diced
• 2-3 large carrots, cut into half circles or diced
• 2-3 celery stalks, cut into half circles or diced
• 3 cloves garlic, minced
• 4-6 cups chicken or bone broth (I have an easy recipe for this)
• Juice from 1/2 lemon
• 1 rotisserie chicken, shredded
• 2 tablespoons fresh parsley
• Half a bag of egg noodles
• Salt and pepper to taste
