Ingredients

• 1 onion, halved and sliced
• 3 garlic cloves, sliced
• 1 tsp tomato puree
• 1 tsp balsamic vinegar
• 1 tsp coriander seeds
• 1 tbsp honey
• 4 tbsp cachaca
• 4 oz olive oil
• 2 x 1lb flank steaks, well trimmed
• sea salt and freshly ground black pepper
• chopped salad, to serve (red pepper, red chicory, cos or little Gem, finely grated red onion, cilantro leaves and cress dressed with olive oil and lime juice)
