• 1 knob of butter
• 1 shallot (finely chopped)
• 2 cloves of garlic (finely chopped)
• 2 rashes of smoked streaky bacon (finely chopped)
• 1 small bunch fresh thyme
• 1 bay leaf
• 1 small bunch fresh parsley (finely chopped)
• 1 kg mussels (cleaned)
• 250 ml Guinness
• 50 ml single cream
• Salt & pepper to taste
