Ingredients

• 1 cup (125g) all-purpose flour, plus extra for dusting
• 1/2 tsp instant yeast
• 1/2 tsp sugar
• 1/2 tsp salt
• 1/3 cup (80ml) warm water
• 1 tbsp olive oil, plus more for brushing
• 1/3 cup (80g) pizza sauce (homemade or store-bought)
• 2.5 oz (70g) fresh mozzarella, torn into pieces
• 1 small ripe tomato, thinly sliced
• Handful fresh basil leaves
• Freshly ground black pepper
