Ingredients

• 2 1/2 cups all-purpose flour, plus extra for dusting
• 1 cup warm water (about 110°F)
• 2 tsp sugar
• 2 1/4 tsp active dry yeast (1 packet)
• 1 1/2 tsp kosher salt
• 1 1/2 tbsp olive oil, plus extra for drizzling
• 3/4 cup tomato passata or crushed tomatoes
• 1 tsp dried oregano
• 1/2 tsp chili flakes (optional)
• 6 oz fresh mozzarella, torn into pieces
• 1/3 cup grated Parmigiano Reggiano
• 1/4 cup fresh basil leaves
• Freshly cracked black pepper, to taste
