Smoked mackerel and sweet potato pasta
A smoked mackerel and sweet potato pasta is a delicious and easy weekday meal. Filled with vegetables and lots of flavors!
Ingredients
- about 350 gram pasta of your choice
- 1 large sweet potato
- 3 smoked mackerel fillets (with pepper)
- 1/4th head of cauliflower
- 3 garlic cloves
- 1 shallot
- oil for baking
- optional: knob of butter
- 100 gram white button mushrooms
- pepper and salt to taste
- handful of lettuce of your choice (we've used dandelion greens)
