Roasted Beet and Crab Salad

Ingredients

• 1 lb Crab meat; picked over
• 1 tb Prepared horseradish; or to
• Black Pepper freshly ground
• 2 tb Sour cream
• 1/2 c Extra-Virgin Olive Oil
• 1/4 c Rice wine vinegar
• 1/2 c One-day pickled red onions
• 1 tb Finely-chopped parsley
• 1/4 c Homemade or store bought
• 2 tb Shallots minced
• 1/2 lb Fresh beets
• Salt to taste
