- 1/2 cup chopped onions
- 1/2 cup chopped green bell peppers
- 2 garlic cloves, crushed
- 1 lb ground beef
- 1/4 cup from 1 container (6.25 oz) Old El Paso™ Original Taco Seasoning Mix
- 1 cup canned black beans, rinsed and drained
- 1 cup of corn kernels, rinsed and drained
- 1 cup ricotta cheese
- 24-30 pasta shells
- 1 can (10 oz) Old El Paso™ Mild Red Enchilada Sauce
- 1 cup (or as needed) Monterey Jack cheese, grated
- Chopped green onions, as needed to garnish
