Ingredients

  • 400 grams of potatoes boiled, grated
  • 200 grams of raw potatoes, grated
  • 600 grams of wholemeal rye flour
  • 400 grams of wholemeal emmer flour
  • 250 grams of rye sourdough
  • 2-3 tablespoons of dark beet syrup
  • 1 cube of fresh yeast (42 grams)
  • 1-2 tablespoons of bread spices (anise, fennel, coriander, caraway)
  • 600 millilitres of water, lukewarm
  • 1 tablespoon of sea salt
